Either it is me, being an idiot, or the link option has changed. Normaly, when I chose the option "Insert Link" I had the possibility to insert the url and then a alternative text which was shown instead of the ugly url.
This option has, as I said, either hidden very good, or disappeared. Coming down to the simple question: How do I insert a alternative text (or image) for my url's now?

Wow, this is gone? I didn't know.... eh.
Nauraly, it is like the Quote Tag. When you are quoting someone you have the [*Quote=] and then the name.
So, in this case, we have it like this
[*url=Http://www.Uffsite.net/forums]Uffsite Forums (Or the IMG tag)[/url]
Uffsite Forums (Http://www.uffsite.net/forums)
So, I didn't know that we took it out o_O

It depends on which editor you're using. If you're using the "standard" editor (where you click a button and it places the tags), what you're looking for will still be there.
If, on the other hand, you're using the WYSIWYG editor (the one where the text actually changes with bold and italics and stuff), it'll prompt you for a URL then paste that URL in the message window, right? What you can do is highlight the URL that's pasted and then type in whatever you want in its place. Alternately, you can highlight the URL and click the image button to insert an image.
Examples (with WYSIWYG editor):
Regular old link (http://www.uffsite.net)
http://www.uffsite.net/aol.jpg (http://www.uffsite.net) <-- Image link
